About the ingredients I use:
Tofu; I am currently using House Foods brand Silken Tofu (www.house-foods.com) as a base for my Mayo and Super Secret Sauce for the burgers, for the Vegan Tsitsiki Sauce that goes on the Gyros, and as a base for my fat free Mac 'n Cheese. It contains no isolated soy protein and is GMO free.
Cheese; I offer Daiya (www.daiyafoods.com) brand Cheddar style shreds as a topping for my burgers and Hot BBQ sammich. It is dairy, lactose and casein free, gluten and soy free, and cholesterol free. I also offer Tillamook Cheddar cheese (www.tillamookcheese.com), which is a naturally vegetarian, rennet free cheese made here in Oregon.
Oils: For toasting the buns, I use Earth Balance Natural Buttery Spread (www.earthbalancenatural.com). This is a vegan product and contains no lactose, caseine and is labelled non-GMO, though canola oil is listed as being one of the oils in its blend...?? For cooking and as an ingredient I use Grapeola Grapeseed oil (www.kushacorp.com). Grapeseed oil is a delicious and healthful oil with no cholesterol or preservatives, high in polyunsaturated fats, Omega "6" fatty acids and Vitamin E.
Worcestershire Sauce; I make my own, Vegan Whatsthishere Sauce. It contains no anchovies!
Breads; I buy a variety of Pita and Mediterranean Flat Breads and buns, what brands depend on where I buy them (and where they're on sale! Being a small operation, I do most of my shopping at full retail in the same stores you shop; Market of Choice, Sundance Natural Foods, Trader Joe's, Fred Meyers and Cash and Carry) All of the breads I buy are Vegan and contain no animal based ingredients.
